Sweet & Sour Chicken

Made this Sweet & Sour Chicken on Saturday. I'm not sure where the "sour" part comes from; I'd call it sweet & savory. It was nice though, will probably make it again.

Spinach-Broccoli Soup and Cashew Chicken with Vegetables

1. Spinach-Broccoli Soup with a dollop of fat free Greek yogurt. This was an experiment, I discovered a pack of chopped spinach in the freezer that's been sitting there for a few months and decided to get rid of it. I wanted something low cal, thus so little lentils, normally I would go for thicker consistency with about 30 g of lentils per serving.

2. Cashew Chicken with Vegetables. This one is from the latest issue of Clean Eating (July/Aug 2010). A very nice recipe, quick and tasty. I sprinkled cashews on top as opposed to adding them while cooking (I like them crunchy).

Thai Coconut Shrimp, Chicken, etc

1. Thai Coconut Shrimp with Soba Noodles. Love, love, LOVE this recipe. Easy, quick, tasty, filling. I've made it 3 times already and will definitely be making it again.

2.Poached Chicken Breast with Peach - Green Bean Salad. It was very good!An unusual, interesting combination of flavours and textures.

3.Pasta Carbonara. That's an old one, but I haven't made it in a while. It's quick, simple, tastes good.

4. Salmon, Philadelphia & Tortilla with Egg whites & Broccoli & bell peppers. They had some really, REALLY good salmon on sale, and I just couldn't bring myself to cook it all. It was so fresh and glistening with fat that I had to make some of my "salted salmon". Just sprinkle with salt, wrap tightly and refrigerate for 24 h. Slice and enjoy. It's not as salty as smoked salmon, but it doesn't taste exactly like sushi either.

5. Cranberry & Fig Stuffed Chicken Breast. Mmmm... Yes, I know, I already showed this one, but it's just sooo good.

6. Chicken Breasts with Caramelized Onions, Cranberries & Balsamic-Glazed Asparagus. I probably won't be making it with asparagus again, it looks like it makes me sick. Its not the first time I felt strange after eating asparagus, so I won't risk it again. But the onion-cranberry mixture on chicken is amazing, I will definitely make it again.

7.Avocado and Roasted Red Pepper Gazpacho with Scallops. I'm not a big fan of cold soups, but with this hot weather upon us, its actually quite nice. Just make sure avocado is ripe. Mine wasn't, and it was too late to cook anything else instead :(

April 04-10

1. Spicy Roasted Chickpeas. An excellent addition to a green salad, meatless or otherwise. A great snack too.
2. Shepherd's Pie with Buttermilk-Chive Mashed Potatoes. I used green onions instead of chives this time, but it doesn't make much of a difference. The only real change I've made to the recipe is that I used kefir (homemade) instead of buttermilk. This time kefir was old and very tangy, I absolutely loved how potatoes turned out, they reminded me of sour cream & onion potato chips flavour. Funny how it's all mixed up in my head. I'm pretty sure that artificial flavours are supposed to remind us of real foods, not the other way around, LOL.

3. Salmon, Romaine lettuce salad with chickpeas and Orange Herb Dressing. Love this unusual dressing! It's a bit bitter because of the orange peel, but not unpleasantly so.

4. Lemon-Marinated Chicken breasts with Eggplant Ratatouille. Mmmm. Yum! It turned out soooo goood! I'm making this marinade for chicken breasts my new favorite. The Ratatouille is a great summer side dish, I know I'll be making it over and over again. The original recipe called for white wine and white wine vinegar, but I had no wine and didn't feel like buying a bottle for mere 1/4 cup of it. So I used chicken broth and apple cider vinegar instead.

5. Salmon Patties with Eggplant Ratatouille. I had half the eggplant left over and decided to make Ratatouille again. Salmon Patties didn't want to stick together very well, so turning them over halfway through was a bit of a challenge. They didn't completely fall apart, but still...

6. Portobello Mushroom Stroganoff. Never thought of using silken tofu to replace a creamy sauce. The result was surprisingly good. There was a bit too much sauce and too little mushrooms though. If I make it again, I'll use 1.5-2 times more mushrooms.

7. Lemon-Marinated Chicken breasts, Romaine lettuce salad with chickpeas and Orange Herb Dressing.

8. Lemon-Marinated Chicken breast with Romaine lettuce salad and Tarragon Mustard Dressing. This dressing has tofu as a base, and I wasn't too excited about the result. It wasn't bad per se, but I prefer the other 2 dressing recipes I've tried so far.

Cooking for One (Mar 21 - Apr 03)

I was lazy last weekend, so this report is going to cover 2 weeks. I repeated a few recipes from the last couple of reports (like Beef & Broccoli Orange Stir Fry or Quinoa with pecans and cranberries), so I'm not including them here.

1. Apple Candy Pork with Chickpea Puree.I LOVE this recipe, it's definitely one of my favorites. Actually, this one and Marinated Pork Chops & Grilled Peaches are my favorite ways of cooking/eating pork. It's just doesn't get any better than this. :)

2. Basil Pecan Vinaigrette. The original recipe calls for walnuts, but I didn't have any. It's pretty good! Yeah, dressings don't look very appetizing by themselves :)

3. Chicken BBQ Pizza. The picture is terrible, I know. But the pizza itself was very good, trust me :) It's on a whole wheat tortilla, and the sauce is obviously homemade (sweet and tangy).

4. Hot & Sour Swiss Chard with pork tenderloin. I've never cooked swiss chard before so I had no idea what to expect. I was ready for a disappointment, but it turned out quite good actually.

5. Skillet Chicken Cutlets with Mushrooms with ... surprise-surprise!... chickpeas puree. I've made this before, and will make again. Quick, simple, tasty.

6. Vegetarian Hash. I've made it half a dozen times before. This dish introduced me to acorn squash. Believe it or not, I've never had it prior to trying this recipe, and I absolutely love this vegetable now. I usually serve it with an egg or an omelet for some protein.

Cooking for One (Mar 13-20)

1. Turkey Tetrazzini. That's a new one, never tried before. I liked how it turned out, only next time I will either add a bit more cheese or my regular spice mix (onion powder, garlic powder, dried parsley, dried chives, a bit of black pepper)

2. Asian Chicken - Soba Noodle Salad. Yeah, a repeat, I know. It's just that I had snow peas left over from last week and I really like this recipe. Oh, and I used turkey fillet instead of chicken this time.

3.Beef & Broccoli Orange Stir Fry. This one is from the latest Clean Eating (Mar/Apr 2010), it was on the cover. Mine maybe doesn't look as good, but it certainly tastes great.

4. Cranberry & Fig Stuffed Chicken Breast. I really missed this one. My ex-husband doesn't like figs, so we made it once back in July, and he didn't want to make it again. But I like figs, and I absolutely love how the flavors combine in this dish.

5. Shrimp & Broccoli Orange Stir Fry. This is uses the sauce from the Beef & Broccoli stir fry recipe (with the addition of sesame oil), but no rice or noodles in here, just a whole bunch of veggies.

6. Eggplant Parmesan with Bulgur and Pine Nuts. This is another favorite I haven't made in months. Not exactly the season for eggplants and tomatoes, but I missed it too much and decided to give it a go even with those pale things they call "hot house tomatoes". Boy, it's soooooo good!

Cooking for One (Mar 01-12)

It was a pretty good 1.5 week; I managed to try one new recipe (Shrimp Croquettes) and repeated a few favorites.
1. Turkey & Chickepeas burger + Chickpea Puree. I've made it at least 3 times before now, and for some reason this time the burgers fell apart while turning over. I suspect there was a bit too much liquid in the ground turkey-chickpea mix. Ah well, it was still very good, presentation doesn't matter THAT much when cooking just for yourself. The side dish - chickpea puree - is my favorite. It's the best alternative to mashed potatoes. Heck, it's MUCH tastier than mashed potatoes.

2. Stuffed Peppers. This was good, very filling and moist (a bit on a high end of my usual calorie range, but it all depends on the size of peppers).

3.Shrimp Croquettes with Tamarind Sauce & Caramelized Fennel. Very unusual, rich in flavour. The preparation time is longer than I like, but the mix for shrimp croquette can be done the night before. I don't think I'll be making croquettes again very soon (they WERE good though), but caramelized fennel is something I've done 3-4 times before, and will repeat quite soon. I love the tangy-sweet sauce!

4. French Onion Soup with VERY unusual"croutons" :) I didn't have any whole wheat bread, so I used a whole grain tortilla instead with somewhat browned Pecorino Romano on top . Of course it's against the "french onion soup" concept, blahblahblah, but who cares? It's good, quick,comforting and low cal.

5. Jambalaya with Shrimp & Bell Peppers. Ok, this one I managed to "almost" screw up. It turned out very hot. I like spicy food and enjoy it, but my ex-husband couldn't eat stuff this hot. The problem was that I made it the night he came over to hang the pictures. Yeah, not nice. He's made all kinds of jokes about my hospitality :)))

6. Asian Chicken & Soba Noodles Salad. The picture is, unfortunately, messy. I was sooo hungry, couldn't force myself to serve it up prettily. This is definitely one of my favorites. It's almost instant (provided you already have a grilled chicken breast), unusual and tastes amazing. Cashews, sesame oil, soy sauce and browned chicken make a heavenly combination. I'm pretty sure it can be turned into a vegetarian-friendly dish by substituting  grilled extra-firm tofu for chicken and using vegetable broth as the base for the dressing.

Cooking for one

Вот уже неделю Маха живет одна. До этого одной я оставалась в юношестве, когда вся семья уезжала на дачу, а мне хотелось самостоятельности и независимости :) Потом был универ, общага. В общем, в юношестве в такие "самостоятельные" выходные я питалась йогуртами и салатами (ибо мозгов не было), а в универе - в общаге. Получается, я никогда не готовила для одной себя. Сейчас йогурты и салаты уже не прокатят, полуфабрикаты уже несколько лет как считаются ядом, clean eating и высокобелковое питание с тренировками никто не отменял, так что получается, что готовить приходится. В принципе, я от этого получаю удовольствие - как от процесса, так и от результата. Ну люблю я вкусно и разнообразно питаться :) (завтрак - исключение, всегда одно и то же). Только вот теперь планировать приходится особенно четко, и сокращать рецепты. А еще решила все это фотографировать, независимо от того, новое блюдо или нет. Это поможет мне stay on track.
На этой неделе я ничего нового не пробовала, зато повторила кое-что, что не готовила с лета.
1. Завтрак, все как обычно - белок, ветчина, сыр, помидор, огурец, красный перец.

2. Это более углеводный завтрак или "второй завтрак" на выходные, когда встаю рано, а на тренировку ближе к обеду. Овсянка на молоке, замороженные ягоды и белковая пудра.

3. Форель, обжаренная на сковороке (на собственном жире) с соусом из йогурта, каперсов, чеснока и зелени. Шкурка не выкидывается, конечно, а жадно поедается. Плюс стандартные овощи.

4. Кинва с пеканами и сушеной клюквой с индюшачьей грудкой. Одно из моих самых любимых блюд. Невероятно просто и быстро готовится, а вкус получается очень богатый.

5. Маринованная свинина с персиками гриль. Обожаю, но с осени не делала, т.к. все ждала сезона персиков. Терпения не хватило (сейл на персики сделал свое дело) :): Маринад: оливковое масло, бальзамический уксус, мед и свежий розмарин. Этим же поливаются персики при запекании.

6. Corn Chowder с консервированным лососем. Я о нем как-то не очень восторженно отзывалась, когда в первый раз делала. В этот раз изменила пропорции, добавила больше овощей, и в итоге он получился густым, правильным. Очень довольна, обязательно повторю как-нибудь.

7. Свинина с соусом из сладкого перца и апельсинов. К сожалению, у меня только красный бальзамический уксус, а по рецепту надо белый. Он покрасил и лук, и апельсины, так что фотка не очень. Но на вкусе это не отражается - просто мням-мням-мням! (внизу 25 г булгура)

Месяц clean eating

С последнего отчета по clean eating прошло чуть больше месяца, и месяц этот был довольно необычным. В связи с этим новых блюд было опробовано мало, всего 5 штук. Сфотографировано было вообще только два. Вот такой вот дурной отчет получается.
1. Moroccan Buffalo & Chickpea Chili. Очень-очень хорошее чили, я никогда раньше не делала его с chickpeas. Получилось гораздо интереснее, чем в red kidney/black beans. Кол-во разных специй может испугать, но результат того стоит. Идеальное блюдо для мороженной говядины. И выглядит симпатично, ярко. Очень жалею, что не сфотографировала.
2. Beef & Broccoli Orange Stir Fry. Это вообще сказка просто. Понравилось безумно. Обязательно буду повторять, только вот куплю еще soba noodles (японские, из гречневой муки). Они только в азиатских магазинах продаются...

3. Lemon Grilled Chicken with Bulgur salad. Довольно просто, но курица удачно маринуется. Мне понравилось.
4. Skillet Chicken Cutlets with Mushrooms. Вкусно, выразительно. Тож понравилось (но совершенно не приспособлено к заморозке)
5. Crustless Italian Quiche. Честно говоря, получилась ерунда :) Мокро слишком. И прошлось индюшачью сосиску подавать с ним, чтоб белка добрать.
